What it is.

Urad Dal is split and dehulled black gram (Vigna mungo) — a high-protein pulse with 25–26% protein content, making it one of the densest protein pulses in the Indian commodity portfolio. Available in three forms: split white (skin removed), whole black (skin on), and split skin-on. The split white variant is the primary GCC food manufacturing and retail form.

Why it matters.

GCC food manufacturers use Urad Dal in ready-meal production, institutional catering, and as a protein ingredient in processed food formulations. The high protein content and consistent cooking behaviour — it absorbs moisture uniformly and softens predictably under heat — makes it a preferred ingredient for high-volume institutional cooking operations that cannot tolerate batch-to-batch variability.

Sourcing.

Sourced from contracted processing facilities in Madhya Pradesh (Indore, Khandwa districts) and Rajasthan (Kota, Bundi districts). Both regions produce Urad Dal with consistently high protein content and low moisture. We do not blend material from multiple sourcing regions within a single lot — origin documentation reflects actual sourcing geography.

Differentiation.

The primary quality failure mode in Urad Dal exports is weevil damage — Callosobruchus maculatus infests pulse grain stores rapidly in warm, humid conditions. Our three-stage processing protocol and post-processing Sortex sorting eliminates visibly damaged grain. Fumigation is conducted before containerisation with a licensed fumigation agency. SGS or Intertek COA confirms the lot is free from live infestation at the time of sealing.

Processing.

Destoning removes soil and stone particles. Gravity separation removes damaged and immature grains. Sortex optical sorting ejects discoloured, damaged, or weevil-damaged grains. Post-Sortex: final visual inspection before bagging. Fumigation before containerisation. Container sealed at SGS/Intertek inspection.

Proof.

SGS or Intertek COA on every lot: purity %, moisture %, broken %, admixture %, weevilled grain %. Container sealed at inspection. COA seal number recorded. Phytosanitary certificate includes Callosobruchus maculatus statement for GCC destinations.
